I made this cake recently for my mom's birthday. Instead of buying some overly-sweet and brightly colored cake at the grocery store, try something homemade and simple for a loved one's birthday! Unlike cupcakes, when I make cakes to layer and decorate, I will admit I usually use an organic box mix. It's just easier than perfecting your own cake recipe (which I'm still working on). I used an organic vanilla mix and added nutmeg and cinnamon to make it a spice cake. I made the cream cheese icing from scratch simply with cream cheese, butter, vanilla, lemon juice, and powdered sugar.

The petal icing design is easy. Cut your icing bag (no tip) so it has a larger round opening. Pipe one dot of icing on your cake. Grab a butter knife and simply place it on your dot and swipe to the right. this will create the petal sort of shape. Top with hydrangeas or your favorite kind of flower.
