One of my favorite things about summer is popsicles! They are so refreshing and pretty, and it's exactly what I need after a long walk on a hot day. My family in Alabama has a Popsicle business, and they have taught me what it takes to make this beautiful and tasty treat. You'll be surprised to see how little time and effort it takes to make such a delicious and refreshing morsel. This pop will make you never want to go back to those artificial-flavored ones ever again!
I absolutely adore using kiwi for this pop, because it looks like the fruit itself on a stick! The seeds give it a unique visual appeal, and after just one bite, you will be blown away by how tasty it is. As soon as you get the perfect balance of kiwi and lemon juice, their magic will light up the pop!
Kiwi may be one of those fruits that people love or hate. But, at my family's popsicle booth, these are a hit for everyone- they'll change your view of the fruit!
We just know you'll be Hook'd.
- 6 Kiwis
- 1 lemon
- Simple Syrup (1 cup of water and 1 cup of sugar)
Prepare simple syrup by boiling the sugar and water until dissolved.
Slice your kiwis in half, scoop out the inside, and put them in a food processor.
After they are processed, put them in a large measuring cup, and add the juice of one lemon. You can use store bought or fresh, but fresh is best!
Add simple syrup into the measuring cup. You can control the amount of simple syrup depending on how sweet you want it to be.
Pour the mixture into popsicle molds.
Freeze them for a few hours until completely frozen.
